Serve up an organic mutton chop for a weekday dinner and you'll be a very popular cook indeed. They're cut from the loin of the mutton carcass so they benefit from the juicy tenderness of the eye meat, topped with a sweet layer of fat that renders down and crisps up as you cook it. As our mutton comes from older sheep that have spent many years grazing organic, clover-rich grass, and hung for at least a week, it has a richer, deeper flavour and a robust bite that make it really hearty and satisfying. These chops are quick to cook and need only simple accompaniments to bring out their best.   

At The Organic Butchery, our grass and pasture fed mutton is slowly matured to produce the rich flavour of that is enjoyed by our customers. We believe in using all of our resources where possible, to cut out waste. After several lambing seasons, our ewes are retired.
