With an intense but delicate flavour and soft, tender texture, lamb heart is an incredibly thrifty and versatile cut that comes conveniently portioned: one heart serves one person. The breeds we've chosen make the most of our abundant West Country pasture, thriving on a diet of grass as well as clover and herbs.
