The topside joint is positioned at the top of the hind leg of the beef carcass. Nestled beneath the silverside, it's a substantial internal muscle that's done a lot of work, especially when the animal has been active and free ranging, as ours have. This hard work results in lean meat with fine marbling, deep, robust flavour and an open-grained texture with plenty of bite.
At The Organic Butchery, all of our beef is grass fed and grows slowly to natural maturity in our high-welfare, organic system. This means the steak you eat is characterful and properly tasty.
