The sheep who produce our mutton play a vital part in our farming activity here at The Organic Butchery. Without these ewes, we'd have no lambs and no lamb meat. Our Lleyn ewes will lamb several times in their lives and when it's time for them to retire we can celebrate the mature, rich flavour of their meat, created by a lifetime of grazing our clover-rich pastures around the farm.
Mutton was once far more popular than lamb, but it fell out of favour when the meat of younger animals became more readily affordable. We're glad there's a newfound appreciation for this traditional meat - not only does it have incredible texture and depth of flavour, but it's also another great way to cut out waste and make use of every resource we have.
