Cut from between the flank and brisket on the lower side of the beef carcass, beef short ribs are a real treat that you may not have experienced before. Meatier and heartier than their porky counterparts, The Organic Butchery's short ribs are perfectly layered with thick marbled meat and soft melting fat. All our grass-fed beef is matured on the bone for 28 days. For a slow-cooking cut like beef short ribs, this hanging time is crucial. It allows the meat to dry out slightly, relaxing and tenderising. This means the grain is open and will absorb flavour while cooking and flake from the bone when it's done.
