You might not have come across this cut before, but if you're a steak lover we think there's a good chance it could be your new favourite. Organic beef chuck steaks are cut from the chuck, found at the top of the front leg, towards the shoulder of the beef carcass. This is a big, hard-working muscle that yields characterful steaks with bags of flavour and plenty of bite. In texture, they're a bit like rump steak. Because chuck steaks are cut from a single muscle, they hold their shape and structure as they cook. They have a delicate marbling of sweet fat that melts away, revealing the open texture of the meat. Our expert butchers trim off any superficial fat so you can enjoy a hearty steak that's tender but really meaty.
