Whole Wild Pigeon, Previously Frozen
Unlike our other game birds, Wild Wood Pigeons are not reared for sport. It is, in fact, considered vermin as it is capable of decimating crops, so it is hunted in set numbers out of necessity to protect farming productivity. This makes pigeon arguably the most sustainable of all the meat available to eat in the UK. Wild Wood Pigeons spends a greater amount of time in the air and works its muscles harder than other birds, it is this reason that it resembles the other darker fleshed game like duck and goose. A brace of pigeons can be served with some lovely mushrooms.
