

Organic 28-day Aged Beef Hanger Steak
It's a contradictory cut, the hanger steak. With its rich marbling and complex texture, you'd be forgiven for thinking it might be chewy. Actually, it's about as tender as beef comes. The Organic Butchery organic hanger steaks are cut from the muscles that support the diaphragm on the side of the beef carcass. There's only one per animal, so traditionally they were seen as something of a perk for the butcher. It's a muscle doesn't really do much work, and rumour has it the name 'hanger' comes from the fact that the muscle just 'hangs' around. We're not 100% certain we believe that.
At The Organic Butchery, we rear our animals to the highest welfare standards, reflected in the quality of our meat; our cattle are able to roam in large fields, grazing on fresh grass for as long as the weather annually permits - slowly maturing, as nature intended.
