

Organic Diced Mutton
Our organic mutton comes from our mature ewes that have spent several years grazing our clover-rich pastures, and this low-intensity lifestyle certainly influences the way their meat tastes and cooks. Our diced mutton, cut from the shoulder that has been hung on the bone for over a week, is a rewarding cut that really delivers depth of flavour. This is one to take your time with – give it a good few hours cooking and it'll be buttery soft and delicious. Because the meat is well matured, it has depth and richness that make it an excellent choice for punchy red-wine sauces. At The Organic Butchery, our grass and pasture fed mutton is slowly matured to produce the rich flavour of that is enjoyed by our customers. We believe in using all of our resources where possible, to cut out waste. After several lambing seasons, our ewes are retired.
