Making full-flavoured stocks and comforting broths at home is a doddle with our organic lamb bones. All that's needed is the slowest of slow simmers to render down the connective tissues and collagen from the joints. Bags of flavour and all the locked-in goodness are released at the same time. Be brave and cook your bones gently for 24 hours to really get the most out of them. The result is a warming and intensely flavoured broth that adds another dimension to lamb stews, casseroles and curries. Oh, and your gut will be happy, too!

At The Organic Butchery, we believe in using the most sustainable methods possible whilst organically rearing our animals; we aim to use as much of the carcass as possible, to reduce wastage. The breeds we've chosen make the most of our abundant West Country pasture, thriving on a diet of grass as well as clover and herbs.
