Where the leg and loin of a lamb meet is the chump. It's not a very elegant name, but it's a fantastic piece of meat and it's from here that we cut our organic lamb rump. The meat has the tenderness of the loin and character of the leg so it really is the best of both worlds – deeply flavoured with substantial bite. Lamb rump is an amazingly versatile cut that responds well to both fast and slow cooking, depending on your taste or mood. The generous covering of fat on the rump melts down when cooked and adds both sweetness and juiciness to the meat. This is good flavoursome fat, not gnarly, chewy stuff. Try our lamb rump with minted peas and lentils.

At The Organic Butchery we believe slow growth is best, the lambs build heart immune systems and strong skeletons. All of this influences the way their meat tastes and cooks. This means that we don't slaughter our lambs until they're at least eight months old which means your organic lamb will have well-developed muscle with a natural, palatable covering of sweet fat.
