The backside of a beef cow, as you might imagine, is a complex group of muscles that have done a lot of work during the animal's life. The eye, cap and tail muscles have worked as a unit, but all have subtly different characteristics. The organic beef rump roast from The Organic Butchery uses all three muscles together, resulting in a really characterful joint with amazing texture and flavour. This isn't a joint you'll see very often but we're really proud of its quality and are sure you'll appreciate it. As well as the muscles, the joint includes their connective tissues and just a modest amount of superficial fat that will melt away into the meat when cooked. At The Organic Butchery,  all our beef is matured on the bone for 28 days to deliver pure, distinctive flavour every time. This slow-growth to natural maturity coupled with a natural grass diet is what makes our beef hearty, with well-rounded flavour, bags of character and substantial texture.
