We hang our mutton on the bone for at least 1 week before it gets butchered. Our mutton mince comes from cuts of the shoulder, chump and breast of the animal, which are meticulously trimmed by our butchers so you get just the right balance of fat. Loads of our favourite recipes make use of mince and there's no reason why it should be beef – we love to switch things up with organic mutton mince for a big hit of flavour. Our mutton comes from animals who have spent many years grazing clover rich grass, which delivers a distinctive and hearty flavour that's a more than capable match for earthy spices, bold accompaniments and rich sauces. Try it squished onto skewers as juicy koftas, baked in a classic shepherd's pie or sizzled with passata in classic spag bol. Whichever recipe you choose, the rich flavour will shine through.

Our organic mutton is developed over several years on a grass-fed diet, produced from our retired ewes that have lived healthy, active lifestyles. The quality of our meat reflects the high-welfare standards that we have for our flocks.
