A very low and slow simmer over a 24-hour period gives the bones the time to yield all of the nutrients and goodness hidden in them. The result is a broth that's packed with flavour while being very gentle on the gut. Used as a stock in sauces, soups and casseroles it adds tremendous depth of flavour, or you can enjoy on its own as a comforting drink.
