At The Organic Butchery, we think the good old-fashioned goose is a much under-appreciated bird. Once upon a time, every smallholding would have kept a goose to do duty both as a guard bird (they can be quite mean and very noisy) and as Michaelmas or Christmas dinner. Because of the richness of their meat and the amount of fat they carry, geese never made it as commercial poultry. So these days, cooking a goose is really something very special indeed. With tender, dark meat and delicious crispy skin, a goose on your table really is a taste of tradition. Take a look at our delicious recipes for some handy tips on cooking.
Our free-range Geese are reared in an organic system, they have access to fresh grass and water at all times and their diets are supplemented with a natural feed. They are raised indoors until about 4 weeks old when they are let outside to graze in large grassland paddocks.

Our geese are reared in an organic, free-range environment with access to water for swimming and grass for nibbling. Like all large game birds, we feel that slow growth is critical to the taste, texture and finish of our geese. So they naturally mature to the age of 24 weeks. Once slaughtered, we dry pluck and wax the carcasses (to make sure there are no stubborn little feathers left) and hand them in a temperature-controlled environment for at least 10 days. This means the meat is relaxed and excess moisture has evaporated when you come to cook your bird.

No. You can leave a message with your order telling us where you would like to have your box placed. It would be best placed somewhere cool or at least in the shade – especially during the hotter months of the year. Our previously frozen products will defrost on their way to you, ensuring freshness upon arrival. Remember to thoroughly defrost before cooking and indulge in the best quality within 24 hours. Please note that this product cannot be refrozen.
Our couriers will send you a text message or email, whichever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.

Our products will stay cold and fresh at the same temperature for up to 40 hours, however previously frozen products will defrost ont the way to you, ensureing optimum freshness when they arrive.

Your delivery box is made of 100% recycled paper and is 100% recyclable.Delivered Fresh
To keep your order cool and fresh we use gel ice packs which will retain a low temperature for a long period of time. Reuse them for a picnic or return them to us through our free packaging returns sevice.Sustainably Insulated
We use paper pulp sheets to insulate the box. They are great for craft projects or can also simply be recycled with paper waste.

You can cancel your order within two hours after your online purchase. We can not cancel an order after this period.
We hope that you enjoy our products. But if for any reason you are unhappy, please let us know why within 28 days of delivery, by sending us the batch number and the reason why you are disappointed with the product. Do not throw the product away as we may need to recall it to confirm the problem.
As your product is perishable, you will not be asked to return it for us for re-selling.
When we have looked at the evidence, we will then consider reimbursing you by means of a credit for a future order or resending the product. We will do our very best to respond as quickly as possible and try to resolve it.

By having certain lines arrive previosuly frozen we can extend the availability of seasonal produce, allowing you to enjoy it throughout the year as sustainably as possible. All previously frozen produce will be listed as such on our website and labelled on the product packaging.

When it comes to cooking your goose, let's dispel the myth: it really isn't tricky. As long as you're prepared for a lot of fat, you'll have no problem. Follow our easy step but step and serve your roast goose with cider gravy plus all the traditional trimmings.
- Take the goose out of the fridge and allow it to get to room temperature
- Preheat your oven to 180°C
- Halve your onion and orange, and place in the neck cavity of your bird followed by your bunch of rosemary
- If you have a big enough oven, sit the bird on the bars of an oven shelf with a deep roasting pan underneath. The fat will drip though into the pan, making it easy for you to drain it off into a waiting jar (you'll need a big one) every 20 minutes or so. Alternatively, pop your bird in a tray if your oven is a little on the smaller size. Still check it every 20 minutes and collect the fat in a jar. Roast for 2 hours for a 4kg bird, and an extra 30 minutes per kg for birds any larger
- Rest under two layers of foil for at least 20 minutes before carving
Top tip! Don't fill the cavity with stuffing, use the neck end instead.
