Organic Chicken Carcass

Bones for making the very flavorsome broths, stocks and soups

By making your own stock not only can you be 100% certain what's in there, but you can also enjoy a depth of flavour that's totally authentic and second to none. As the key ingredient in broths, soups, gravies, and consommés, stock from an organic chicken carcass cannot be beaten for taste. Once you've made it, you'll never go back to a stock cube again. Looking for an alternative? try using our Duck Carcasses for a more depth of flavour, adding indulgence to your dinner.

At The Organic Butchery, we believe in using the most sustainable methods possible whilst organically rearing our animals; we aim to use -quite literally- as much of the carcass as possible, to reduce wastage.

As a speedy alternative to homemade stock, try our organic chicken bone broth.

Sustainability is one of the key elements in the The Organic Butchery philosophy so it's important to us that nothing goes to waste. That means making use of every piece of every carcass. We don't chuck bits away because they're not prime cuts. Rather we extract goodness and value from everything a carcass has to offer. The bones from our organic chickens are full of flavour and packed with goodness. That's why we believe making a bone stock is one of the most important uses for any carcass.

As a nation, we've grown used to eating a lot of chicken. It's tasty, lean and versatile so it's easy to understand why it's so popular. Unfortunately, popularity has encouraged intensive farming practices that are less than ideal for the birds and can result in low-quality meat for the consumer. At The Organic Butchery, we rear our chickens in a free-range, organic environment and to the highest welfare standards set out by the Soil Association. That means the birds have the freedom to roam outdoors during the day where they can forage, scratch and follow their natural instincts, with the shelter and safety of houses at night and in bad weather.

Please note your Organic Chicken Carcasses may arrive cut in half, convenient for making smaller batches of bone broth. As this is a natural product the exact weight may vary depending on the size of the bird.

FREQUENTLY ASKED CHICKEN CARCASS QUESTIONS:

  • Chicken carcass is what’s left after a chicken has been butchered to create the popular cuts of chicken, we all love so much. Sustainability is one of the key elements in the The Organic Butchery philosophy so it's important to us that nothing goes to waste. That means making use of every piece of every carcass. • When choosing any meat to purchase, it is worth carrying out some research. There are a number of studies that suggest organic chicken is a healthier option, containing less saturated fat and significantly higher levels of omega- 3 fatty acids, which are good for your heart. There are also several other reasons why choosing organic chicken is a good idea. They range from the contribution of organic farming to climate change, animal welfare and the use of pesticides and medicines used in the farming of conventional chickens, organic animals are only given antibiotics if absolutely necessary, rather than routinely, as they are in lower welfare systems to prevent spread of disease

  • Organic chicken and non-organic chicken differ by the standards to which they are reared and ultimately slaughtered. Organic chickens are given the freedom to live their lives as nature intended, roaming freely, feeding on a natural diet, and with minimal intervention of medicines, and no use of fertilisers and pesticides. Organic chicken has to be certified, all of our organic meat at The Organic Butchery is certified by the Soil Association, the decision to work with the Soil Association’s was, if we’re honest, a no-brainer. They demand some of the most stringent standards in the world of farming and food production. This ensures that the quality of everything carrying the Soil Association stamp is impeccable.

  • Organic chicken is free range, meaning our chickens have access to outdoor space to roam freely during the day and do all the things they love, such as scratching, foraging, chasing flies, taking dust bath and basking in the sun. The chickens then have the warmth and security of a spacious barn at night.

    Can't Find the Answer?

If you cannot find the answer to your question and would like to speak to someone contact us and we will be happy to help.

To really maximise flavour, roast your carcass in a moderate oven until it's just starting to brown. Then transfer to a stockpot, cover with boiling water and add the vegetables of your choice. Carrots, onions and celery are traditional, but feel free to add any root veg (well, probably not beetroot...) as well as garlic and big handfuls of herbs. You might want to go easy on seasoning if you plan to use your stock as a basis for soups and gravies. Let everything bubble away on the gentlest of heats for a good few hours before straining off the liquid and discarding the bones and veg. Use straight away or portion into bags or plastic trays and freeze for use later.
