Nitrates and nitrites are commonly used in the commercial curing process to preserve the meat and keep the meat pink to enhance its shelf appeal in the supermarket. All of our pigs are born and reared in a healthy outdoor environment, with access to plenty of room in a pig ark if they need shelter from the elements, in small sociable groups. The piglets get plenty of exercise and build up strength by playing boisterously. They also have the chance to wallow, rootle and get up to mischief as their instincts dictate.We do not follow conventional methods; our organic pigs are not given routine antibiotics, enabling them to have effective, natural immune systems – aided by their healthy grass-fed diet. This all contributes to the taste, texture and nutritiousness of our organic pork.
