Whole Wild Wood Pigeon, Previously Frozen
Wild wood pigeon is one of the greatest wild delicacies in the UK
Unlike our other game birds, Wild Wood Pigeons are not reared for sport. It is, in fact, considered vermin as it is capable of decimating crops, so it is hunted in set numbers out of necessity to protect farming productivity. This makes pigeon arguably the most sustainable of all the meat available to eat in the UK. Wild Wood Pigeons spends a greater amount of time in the air and works its muscles harder than other birds, it is this reason that it resembles the other darker fleshed game like duck and goose. A brace of pigeons can be served with some lovely mushrooms.
*This product may contain lead shot or bone fragments.
Lead-shot game refers to Pheasant, Partridge, Deer, Goose, Wood Pigeon, Woodcock & Rabbit shot for food using pellets or balls made of lead. Roasted - This technique works beautifully for whole birds. Preheat your oven to 180C/165C fan/350F/gas mark 4. Wash the pigeon inside and out and pat dry, then heat some olive or vegetable oil in a pan and fry the pigeon until lightly browned. Place on a hot, oiled roasting tin and cook, basting occasionally, for 10-12 minutes, or a couple of minutes more if you want it well done. Rest for 5 minutes before serving.
Pot roasted - This is another great way to cook whole birds. Preheat your oven to 220C/200C fan/425F/gas 7. Wash the pigeon inside and out and pat dry. Heat some oil and butter in a Dutch oven or similar hob and oven-proof lidded pot and fry the pigeon until lightly browned. Add other ingredients of your choice – for example, stock, wine and vegetables. Bring to a simmer then put the lid on the pot and place in the oven for 20 minutes. Remove and rest for 10 minutes before serving.
