Pheasant, the unsung hero of the British countryside crockpots! Free-ranging outdoors for their entire life, pheasants (like all game) are naturally lean. The trick to cooking a pheasant is to do so at a much lower heat, but for a longer amount of time. Slow cooking this way will prevent the pheasant from drying out. You could also coat it in butter or olive oil to keep it moist. Failing that, a good glug of cider or wine and a broth or stock will make for a mouth-watering meal.

Lead-shot game refers to Pheasant, Partridge, Deer, Goose, Wood Pigeon, Woodcock & Rabbit shot for food using pellets or balls made of lead. Eating lead-shot game meat on a frequent basis can expose you to potentially harmful levels of lead. To minimise your risk of lead intake, if you frequently eat lead-shot game meat, particularly small game, you should cut down your consumption.

Exposure to lead can harm the developing brain and nervous system. So cutting down the amount of lead-shot game eaten is especially important for:

  • toddlers
  • children
  • pregnant women
  • women trying for a baby

This product has been previously frozen and therefore may defrost partially or fully on its way to you. Due to this it is not suitable for re-freezing.

All of our sustainable game meat is supplied by Wild and Game. Back in 2017 their founders Steven Frampton and Michael Cannon, both wild game enthusiasts, decided to do something about the under-consumption of game in the UK. While our countryside yields an abundant supply of beautiful game meat, the traditions of cooking with it had largely been lost. Steven and Michael saw an opportunity to ignite a new passion for game while helping to cut reliance on imported and intensively farmed meat.

They also wanted to encourage guardianship of our countryside and promote a healthier way of eating. We hope you’ll join us in embracing this lean, healthy, sustainable and delicious source of meat from our fields and forests.Game has often been seen as a seasonal meat, but our products are supplied frozen so you can enjoy them all year round.

  • We deliver all around mainland Britain, excluding the Highlands and Islands. You will be able to choose your preferred delivery slot at checkout.

  • We can deliver to you Tuesday to Saturday.

    We will pick, pack and deliver your box the day you have requested.

    For every order, we'll send you a text message on the morning it is due to be delivered.

    Our courier will leave it in your requested safe place if you would prefer a contactless delivery.

  • We have a minimum order of £50. 

  • Our Standard Delivery Charge is £4.95 (Tuesday to Friday). There is Free Delivery on Orders Over £120, Receive your order Before 12 pm for £6.95. Saturday Delivery is £6.95

  • No. You can leave a message with your order telling us where you would like to have your box placed. It would be best placed somewhere cool or at least in the shade – especially during the hotter months of the year. Our previously frozen products will defrost on their way to you, ensuring freshness upon arrival. Remember to thoroughly defrost before cooking and indulge in the best quality within 24 hours. Please note that this product cannot be refrozen.

    Our couriers will send you a text message or email, whichever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.

  • Our products will stay cold and fresh at the same temperature for up to 40 hours, however previously frozen products will defrost ont the way to you, ensureing optimum freshness when they arrive.

    To keep your order cool and fresh we use gel ice packs which will retain a low temperature for a long period of time. Reuse them for a picnic or return them to us through our free packaging returns sevice.

     

    Sustainably Insulated

    We use paper pulp sheets to insulate the box. They are great for craft projects or can also simply be recycled with paper waste.

     

  • You can cancel your order within two hours after your online purchase. We can not cancel an order after this period.

    We hope that you enjoy our products. But if for any reason you are unhappy, please let us know why within 28 days of delivery, by sending us the batch number and the reason why you are disappointed with the product. Do not throw the product away as we may need to recall it to confirm the problem.

    As your product is perishable, you will not be asked to return it for us for re-selling.

    When we have looked at the evidence, we will then consider reimbursing you by means of a credit for a future order or resending the product. We will do our very best to respond as quickly as possible and try to resolve it.

    By having certain lines arrive previosuly frozen we can extend the availability of seasonal produce, allowing you to enjoy it throughout the year as sustainably as possible. All previously frozen produce will be listed as such on our website and labelled on the product packaging.

In stews and casseroles: Cook in the oven at a low temperature – around gas mark 2/150C/130C fan, for 2 hours.

Roasted: heat the oven to gas mark 7/220C/200C fan. Take the pheasant out of the fridge for 30 minutes prior to cooking. To make sure it stays moist, lay some bacon rashers over the pheasant and put an onion and a knob of butter inside the pheasant. Place on a heated, oiled baking tin and cook in the oven for about 35-45 minutes, basting regularly. It’s ready when the internal temperature of the thigh is 155°F to 160°F. If you don’t have a meat thermometer, pierce the flesh inside the thigh and check whether the juices run clear. Rest for 10 minutes before serving.

Pot roasted: this is a great way to keep the pheasant moist. Pre-heat the oven to gas mark 5/190C/170C fan and brown the pheasant in a Dutch oven or similar lidded hob and oven-proof dish. Add your other ingredients - for example, stock, wine or cider, herbs and vegetables, and cook in the oven with the lid on for about 25-30 minutes until the pheasant is cooked through (as above, check the internal temperature of the thigh has reached 155°F to 160°F. If you don’t have a meat thermometer, pierce the flesh inside the thigh and check whether the juices run clear). Rest for 10 minutes before serving.

Barbequed: spatchcock or joint the pheasant . Marinade if desired, then cook as you would chicken.
