WHAT IS ORGANIC LAMB?​

All of our organic lamb comes from free-range animals born and reared in our lush, sustainable West Country pastures. Many lambs are grown quickly, fed on grain to ‘finish’ them at speed, we believe that it’s better for animals to grow at the rate nature intended and lead active lives.

Ingredients

For The Vegetables

  • 2 small red onions, quartered
  • 2 red bell peppers, roughly chopped
  • 150g plum tomatoes, halved
  • 1 courgette, chopped
  • 2 garlic cloves, roughly chopped
  • 2tbsp extra virgin olive oil
  • 2tsp zaatar
  • 2tsp thyme
  • 2tsp oregano

For The Potatoes

  • 150g baby new potatoes
  • 2tbsp extra virgin olive oil
  • 1tbsp rosemary
  • 1tbsp thyme

Method

For The Pies

  1. Defrost the pie overnight in the fridge
  2. Brush over the pie with an egg or milk wash making sure it is fully coated
  3. Preheat oven to 180°C and cook for 30 minutes, until the pastry is golden

For The Vegetables

  1. Preheat oven to 200°C
  2. Prepare the vegetables and place them in a deep roasting tin. Cover with oil and herbs then mix to ensure they are well coated
  3. Place in the middle of the oven and roast for 30 minutes

For The Potatoes

  1. Preheat oven to 200°C
  2. Place the potatoes in a deep saucepan and cover with water
  3. Bring to the boil and parboil the potatoes for 10-15 minutes
  4. Drain then remove from heat. Using the palm of your hand, or the back of a spoon, gently crush the potatoes so they slightly burst open. Place them on a baking tray or roasting tin and cover with oil and herbs
  5. Pop them in the oven and roast for 30 mins or until golden

  • Organic meat, in our opinion tastes better than conventionally farmed meat. Organic meat truly tastes how meat should taste, full of ‘meaty’ flavour as a result of a natural diet, free of chemicals and hormones and a slow growth to full maturity. Sadly, we have become accustomed to the bland offerings of mass-produced meat but when you taste organic meat you will never go back to the flavourless stuff again.

  • When choosing meat to purchase, it is worth carrying out some research. There are a number of studies that suggest organic meat is a healthier option – higher in Omega 3, Amino Acids and Healthy Fats. There are also several other reasons why choosing organic meat is a good idea. They range from the contribution of organic farming to climate change, animal welfare and the use of pesticides and medicines used in the farming of conventional animals having a detrimental effect on our health.

  • By definition, organic beef in the UK is fed on a diet predominantly made up of grass. However this won't necessarily make it 100% grass fed, this is not an organic standard. We supplement our organic beef’s diets when grass alone isn’t up to doing the job. As part of our regular crop rotation, we plant some cereals, such as barley, alongside nutritious legumes like peas. These can be grown together in the same field and harvested as a ‘whole crop’. That means the stalk and seed are cut and stored together, so there’s no by-product and no waste. It also means the cattle get a balanced meal with plenty of roughage. 

  • When choosing lamb to purchase, it is worth carrying out some research. There are several studies that suggest organic meat is a healthier option, containing less saturated fat and higher in omega- 3 fatty acids, which are good for your heart. We believe organic lamb tastes better than commercially farmed alternatives, tasting ‘meaty’, rich, sweet and decadent. All of The Organic Butchery's lamb comes from our trusted local suppliers. They thrive on a diet of grass as well as clover and herbs. Growing slowly, the lambs build hearty immune systems and strong skeletons. All of this influences the way their meat tastes and cooks, we really believe that happy animals result in the best quality and best tasting meat.
