Organic Pork Belly On The Bone
A traditional roasting joint that's a little indulgent and a lot delicious!
Organic pork belly on the bone is a roasting joint that you might not have cooked with before. Once you give it a go, though, we reckon you'll be converted. The mingled layers of fat and muscle make this a fairly frugal joint that rewards patient cooking with tenderness and bags of flavour. Leaving the bone in contributes even further to the heartiness of the taste and helps to lock succulence into the meat. There's a fair amount of fat in this joint – which is why it's most often used to make exquisite streaky bacon – but don't let this put you off. It's sweet fat (not gnarly and gristly), much of which melts away during slow cooking. The rest blends irresistibly with the meat to make a mouthful that's rich and indulgent. Here's a recipe!

The Organic Butchery pork comes from pigs that are a cross between two traditional breeds: the Gloucester Old Spot and the Saddleback. These are native to England and are well adapted to our climate and landscape. They're hardy enough to live outdoors all year and thrive in farming systems that allow them to roam, rootle and play. By letting our animals grow to maturity at a natural rate the carcasses that they yield are well balanced and flavoursome. They have just the right amount of fat to add flavour and, as the pigs have been active during their lives, they're well muscled, too. An old-fashioned pig leading an outdoor life has one other very important benefit – it develops a thick skin (much thicker than an indoor pig) and that translates into the crispiest crackling you can get.

No. You can leave a message with your order telling us where you would like to have your box placed. It would be best placed somewhere cool or at least in the shade – especially during the hotter months of the year. Our products will stay at the same temperature for up to 40 hours, so just make sure that you can pick up your order within that time.
Our couriers will send you a text message or email, whichever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.

You can cancel your order within two hours after your online purchase. We can not cancel an order after this period.
We hope that you enjoy our products. But if for any reason you are unhappy, please let us know why within 28 days of delivery, by sending us the batch number and the reason why you are disappointed with the product. Do not throw the product away as we may need to recall it to confirm the problem.
As your product is perishable, you will not be asked to return it for us for re-selling.
When we have looked at the evidence, we will then consider reimbursing you by means of a credit for a future order or resending the product. We will do our very best to respond as quickly as possible and try to resolve it.

Can't Find the Answer?
If you cannot find the answer to your question and would like to speak to someone contact us and we will be happy to help.
Very slowly is the best way to go with your organic pork belly on the bone. But slow doesn't need to mean fussy. Sizzle it in a hot oven for about 30 minutes until you can see the skin fizzing and the fat starting to render. Then turn it down to a low heat and give it a good two or three hours to do its thing. Before you take it out, crank up the heat for a final 15 minutes to give the crackling a chance to get really crisp. Resting the joint will deliver tender meat, but it will make the crackling soften. So deftly slice the crackling layer off and set it aside before wrapping the rest of the joint in foil and letting it relax for 20 minutes. You can always whack the skin back under the grill for a couple of minutes before serving if it's not quite puffed and crispy enough.
