Organic 28-day Aged Beef Fillet Tail
Buttery soft steaks full of succulent flavour - we love this 'no-waste' cut
Quite rightly, the fillet is considered the prize on the beef carcass. It sits nestled below the sirloin and above the flank on the animal's side and really isn't a hard worker. This means that if you want the softest, most tender cut of beef, fillet is the way to go. It's otherwise known as the tenderloin, which pretty much sums it up. The fillet is a long muscle that tapers off towards the end. Prime fillet steak is cut from the centre of the muscle; chateaubriand comes from the thicker 'cap' end, which leaves the tapering 'tail'. The flavour, texture and quality of the tail is every bit as good as the rest of the cut, it's just a slightly inconsistent shape. That's why we leave it as a generously portioned piece, so you can decide if you want to cook it as one or portion it for two.

At The Organic Butchery we put a lot of time and effort, plus a lot of care and attention, into rearing our beef cattle. A natural diet of organic grass means the calves grow strong and healthy, with robust bones and substantial muscles. We believe that nature knows what she's up to, so we don't hurry things along. We let our beef animals grow slowly to natural maturity, and that ensure the meat they produce is tender, flavoursome and has the perfect balance of fat to muscle.

We will pick, pack and deliver your box the day you have requested.
For every order, we'll send you a text message on the morning it is due to be delivered.
Our courier will leave it in your requested safe place if you would prefer a contactless delivery.

No. You can leave a message with your order telling us where you would like to have your box placed. It would be best placed somewhere cool or at least in the shade – especially during the hotter months of the year. Our products will stay at the same temperature for up to 40 hours, so just make sure that you can pick up your order within that time.
Our couriers will send you a text message or email, whichever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.

To keep your order cool and fresh we use gel ice packs which will retain a low temperature for a long period of time. Reuse them for a picnic or return them to us through our free packaging returns sevice.Sustainably Insulated
We use paper pulp sheets to insulate the box. They are great for craft projects or can also simply be recycled with paper waste.

You can cancel your order within two hours after your online purchase. We can not cancel an order after this period.
We hope that you enjoy our products. But if for any reason you are unhappy, please let us know why within 28 days of delivery, by sending us the batch number and the reason why you are disappointed with the product. Do not throw the product away as we may need to recall it to confirm the problem.
As your product is perishable, you will not be asked to return it for us for re-selling.
When we have looked at the evidence, we will then consider reimbursing you by means of a credit for a future order or resending the product. We will do our very best to respond as quickly as possible and try to resolve it.

If you cannot find the answer to your question and would like to speak to someone contact us and we will be happy to help.
Your organic fillet tail comes as portion of approximately 350g. That's a generous portion for one (go ahead, we're not judging) or a sharing portion for two. As with all cuts of fillet, cooking it quick and hot is the best way to preserve the succulence and tender texture. So be brave and cook your fillet tail on a smoking hot griddle for just over a minute per side, before letting it rest, wrapped in foil, for five or ten minutes more. You'll be rewarded with a juicy, butter-soft interior and a crisp outside. Fillet tail is also an excellent choice of cut for dishes such as beef stroganoff, which are cooked quickly, so call for a really tender strips of meat.
