Organic Duck Breasts, Previously Frozen

Tender, juicy and sweetly flavoursome – always a treat

The unique combination of so-sweet fat, rich meat and crispy skin makes organic duck breast a real joy to eat. As the breast cooks and the fat renders down, it floods the meat with bags of flavour and keeps it juicy throughout. The flavour has tremendous depth and the open-grained texture gives it great bite. And the versatility of duck breast means it can make a simple-but-hearty supper or a fine-dining centrepiece, however, the fancy takes you. Why not try our recipe of duck breast with blackberry and bay sauce with dauphinoise potatoes.

All of our Perkin ducks are locally reared in Devon’s Blackdown Hills, by working with a poultry specialist who has 40 years of experience running a Soil Association-certified farm, we know that our duck has been reared in a natural, high-welfare system. A natural diet, lots of exercise and the ability to swim, dabble and preen means our ducks are fit and healthy, with strong immune systems.

If you love the taste of duck, try our organic whole ducks or organic duck wings.

Waterfowl like organic ducks and organic geese are well insulated with a layer of buoyant fat to keep them warm in the water. It's this fat that makes the meat of these birds so distinctive – and so delicious. All of our ducks grow in an organic system that has animal welfare at its core. They range freely in grassland with access to ponds, allowing them to follow their ducky instincts. Their active lifestyle and natural diet means they produce carcasses with the well-balanced combination of fat and muscle that we're looking for.

When cooking your duck breast, don't be afraid of the fat and definitely don't cut it off before cooking. The fat brings flavour and succulence, really enhancing the taste of the meat. To cook duck breast to perfection start by searing the skin in a medium-hot frying pan. This will crisp up the skin and start the process of rendering down the fat. After about 5 minutes searing, transfer the duck to a 180˚C oven for 12 to 15 minutes. Rest for about another 15 minutes before serving. It should be perfectly pink and juicy in the middle. Serve with a sharp cherry or plum compote, some garlicky green beans and boulangère potatoes.
