Organic Turkey Crown
A stunning centrepiece that the cook will love as much as the guests!
An organic turkey crown from The Organic Butchery makes a very elegant and easy-to-cook centrepiece for your dinner table. If you're catering for lovers of white meat, this joint means there's plenty of breast for everyone and no squabbling over who gets the best bits. Our skilled butchers have removed the legs from the bird, leaving the breast attached to the bone and the skin on. The wings are left on to make sure your crown sits proudly on the table. We have also included the giblets to make a super tasty gravy.
We only rear raditional Bronze Organic Turkeys, an old fashioned breed that provides a bird with fantastic flavour and an even coverage of meat. The natural flavour of the bird is made even better by slow growth to maturity. This takes up to 24 weeks and results in meat that’s reliably juicy and tasty, with tender texture and just the right amount of fat. All of our turkeys are dry plucked and hung for 10 days so the meat is soft and flavoursome, without any shrinkage in the oven.

At The Organic Butchery all of our turkeys are Bronze birds. This is an old-fashioned breed that almost fell into extinction when white turkeys were chosen for intensive farming. Apparently bronze and black turkeys became less popular because dark pin feathers could be seen on the meat. Once slaughtered, our birds are dry plucked and waxed to make sure there are no pesky feathers left behind. The carcasses are then hung in a temperature-controlled environment for at least 10 days, meaning the bird you receive will be in tip-top condition, tender as can be and packed with flavour.
Our organic turkeys come from Walter’s Turkeys in Berkshire. This Soil Association certified organic farm produce the finest quality Christmas turkeys by carefully selecting slow growing breeds that reach full maturity naturally. All turkeys have plenty of space to run about in and enjoy natural daylight. From late summer the turkeys live in large airy barns that open on to green downland fields. Every day they explore their natural surroundings pecking at the grass and bales in the fresh air. At night they are in large, straw bedded barns with plenty of room. They are fed on high quality organic feed (a mix of wheat, barley and oats). They are one of the few organic turkey producers in the country that hang and dry pluck their turkeys in the traditional way.

Can't Find the Answer?
If you cannot find the answer to your question and would like to speak to someone contact us and we will be happy to help.
Because our birds are slow grown and the carcasses have been hung, they'll take less time to cook than an intensively reared bird. And you'll see no shrinkage in the oven as they're not full of excess moisture. You can cook your turkey crown exactly as you would a whole bird.
- Allow the turkey to rest at room temperature for two hours, it's best to remove the trussing string before cooking
- Do not stuff the main cavity as this prevents the turkey from cooking properly, instead opt for an apple, lemon or onion
- Preheat your oven to 230°C/ 210°C fan
- Sprinkle the turkey with salt and pepper and place in a deep bottomed roasting tray breast side down, insert a timer if you have one and cover loosely with tin foil
- Cook the turkey at this temperature for the first 20-60 minutes depending on size, before reducing the heat to 190°C/ 170°C fan for the remaining time
- Roast for 30 minutes per kg
- Everyone loves crispy skin, so remove your foil and turn your turkey on its back for the last 20-30 minutes of roasting time
- Remove from the oven, cover loosely with foil and rest well before carving
- Whilst resting, pour the juices from your roasting tray into a saucepan and reduce over a high heat to make the most delectable jus
