Organic Turkey Legs, Previously Frozen
Rich brown meat means bags of flavour
Organic turkey legs deliver the hearty, traditional flavour of brown poultry meat, and plenty of it. Though the white meat of the breast is much sought after, we think it's the tasty brown meat that's the real prize on the turkey carcass. Less prone to drying out, it has a great depth of flavour that means it works in both delicate and robust recipes. And if you don't want to cook a whole bird, a turkey leg is the perfect mini roast, yielding enough meat to generously serve two people.
At The Organic Butchery it is important to us that our suppliers mirror our high-welfare standards. Our Turkeys come from Walters Turkeys in Berkshire; where they are slow-grown and have plenty of space to roam, run and indulge their natural instincts. They are one of the few organic turkey producers in the country that hang and dry pluck their turkeys in the traditional way.
- 750g, Serves 3-4
In intensive farming systems, you're far more likely to find white turkeys being reared. That's because they've been selectively bred to grow quickly, laying down abundant white breast meat at the expense of leg meat. We prefer the old-fashioned confirmation for our turkeys from Ed Walter's, a bird with a well-balanced carcass that takes a bit longer to grow. These birds are built as nature intended, with strong legs that are the result of an active free-range lifestyle. As in all things, we believe that nature knows what she's talking about when it comes to turkeys.

Freezing is the most natural way of preserving food. And as here at The Organic Butchery we believe in slow-grown, healthy food, a form of preservation that doesn’t need artificial additives gets a big tick from us.
It also guarantees it will arrive with you in tiptop condition - confidently delivering fresh meat would be much more challenging.
-
At The Organic Butchery, we source our chicks from an organic breeding flock in the South West, this means they are certified organic from birth. We never use antibiotics on our chickens because our organic farming system provides a natural environment for our birds to thrive without the need for preventative medication: room to roam, a naturally foraged balanced diet, clean water and high hygiene standards.

If you're simply roasting your turkey leg, it'll take around an hour in a moderate oven.
- Heat the oven to 200°C/180°C fan. Place the meat in a roasting tray, drizzle over some oil and cover with foil and pop in the oven
- After 10 minutes, reduce the temperature to 180°C/160°C fan and cook for 30 minutes
- After 30 minutess, insert a skewer into the thick part near the bone to see if the juices that run out are still pink. If so, continue cooking until they run clear
- Remove from the oven and allow to rest for 10 minutes whilst wrapped in foil, the skin will be crispy and the knee joint will yield easily when gently twisted
For traditional flavours, rub the skin with a little olive oil, sprinkle with some thyme leaves and lay on some very thin slices of lemon. Or make a simple rub with Chinese 5-spice, some brown sugar and a sprinkling of salt. Rub the skin with some sesame oil before massaging in the rub. The kitchen will smell divine as the meat cooks.
