Woefully under-rated, organic pork trotters are an old-fashioned favourite that's prized in many cuisines around the world. They're having a slow revival in the UK, but even then they remain very much a marginal cut. Given how thrifty and versatile they are, we think they're definitely worth rediscovering! Packed with gelatin, trotters are meatier than you might think. When slow-cooked they'll yield tender meat, hearty stock and lots of jelly – perfect for use in pies and terrines.
Pigs grown in an organic system are some of the healthiest you'll find. As they live free-range lives in sociable family groups and enjoy an organic diet, they're untainted by chemicals or growth promoters. Medication is kept to a minimum on organic farms, so can be certain your pork bones come from a pig that's never been routinely dosed with antibiotics. A natural, outdoor lifestyle means our pigs develop robust immune systems, and that benefit is passed to you when you make bone broth. At The Organic Butchery, we believe in using the most sustainable methods possible whilst organically rearing our animals; we aim to use as much of the carcass as possible, to reduce wastage.

As a food culture, we've grown used to discarding or ignoring the parts of a carcass that we find icky. In fact, some bits have fallen so far out of favour or are considered so distasteful that you're unlikely to even see them. At The Organic Butchery we believe that every part of a carcass, especially the offal, should be utilised – out of respect for the animal and in recognition of the work that's gone into rearing it. And what we definitely shouldn't ignore is the fact that offal represents some of the best nutrition we can get from meat. All that gelatin in trotters? It's a versatile ingredient we should definitely get reacquainted with.

For every order, we'll send you a text message on the morning it is due to be delivered.
Our courier will leave it in your requested safe place if you would prefer a contactless delivery.

No. You can leave a message with your order telling us where you would like to have your box placed. It would be best placed somewhere cool or at least in the shade – especially during the hotter months of the year. Our products will stay at the same temperature for up to 40 hours, so just make sure that you can pick up your order within that time.
Our couriers will send you a text message or email, whichever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.

Our products will stay cold and fresh at the same temperature for up to 40 hours. When you receive your box, simply refridgerate and cook before the use by date provided or freeze to enjoy at a later date.

We use paper pulp sheets to insulate the box. They are great for craft projects or can also simply be recycled with paper waste.

You can cancel your order within two hours after your online purchase. We can not cancel an order after this period.
We hope that you enjoy our products. But if for any reason you are unhappy, please let us know why within 28 days of delivery, by sending us the batch number and the reason why you are disappointed with the product. Do not throw the product away as we may need to recall it to confirm the problem.
As your product is perishable, you will not be asked to return it for us for re-selling.
When we have looked at the evidence, we will then consider reimbursing you by means of a credit for a future order or resending the product. We will do our very best to respond as quickly as possible and try to resolve it.

Can't Find the Answer?
If you cannot find the answer to your question and would like to speak to someone contact us and we will be happy to help.
Your organic pork trotters will be clean when you receive them. To extract the gelatin, simply add the trotters to a pan with onion, celery, carrots and herbs, cover with water, bring to the boil then simmer for a good few of hours. Skim off any scum that gathers and keep the water topped up. When the trotters are tender, remove them and the veg from the stock. Strain the liquid through a fine seive and leave to cool. The fat will rise to the surface and the jelly will set. Store it in jars or freeze in silicon moulds for use in pies and stews or as an ingredient in gravies. Don't forget to pick the succulent meat from the cooked trotters – it's particularly excellent in a coarse terrine, alongside some of the jelly, of course.
