Organic Pork Mince
Add distinctive flavour and succulence to your suppertime favourites
Although beef may consider itself to be king of the minces, we think there's a lot to be said for organic pork mince. It has a delicacy of flavour that's mellow and rounded and it works exceptionally well in pretty much every style of cuisine. At The Organic Butchery, we use shoulder, leg and belly cuts to make our pork mince. It's fantastically meaty and we keep it pretty lean, with just enough fat to enhance the flavour and keep things moist during cooking.
Animals that have lived natural, active lives produce meat that tastes better and is better for you. That's something that we fully believe, and when we taste the meat that comes from our organic free-range pigs we certainly can't argue. It's well documented that pigs are intelligent animals. They like to live in sociable family groups and are playful, inquisitive and prone to looking for trouble. Their most powerful natural instinct is to rootle with their powerful snouts, digging up roots and worms with which they supplement their natural diet.

Sustainability is a core element in The Organic Butchery's philosophy. In keeping with that we make sure we use every viable part of every carcass we butcher – even the bones and fat go to good use. What we don't do is use gnarly, gristly or questionable bits to bulk out our mince. It might be a thrifty cut, but it certainly isn't second rate. If it were, we wouldn't put our name to it.

Organic pork mince and Organic beef mince are both delicious in our opinion, but they do taste different to each other. Pork mince has delicate flavour in comparison to the deep, meaty taste of beef mince. Calorie content of both mince types depends on the fat content, but typically beef mince is higher in calories and saturated fat than pork, as well as being higher in iron and zinc.

Organic pork mince really is about as versatile as it comes. Transform it into old favourites like burgers or sausage rolls; combine it with prunes and chestnuts for a festive stuffing; slow cook it with tomatoes and herbs for the ultimate ragu. Alternatively, blitz your mince up with garlic, spring onions, lemon grass, chilli, coriander stalks and seasoning. Roll into small balls and fry until browned before simmering in pork stock for 10 minutes. Toss some chopped pak choi and whole sugar snap peas into the broth a couple of minutes before the time's up. Serve with thick noodles and a sprinkling of salty chopped peanuts.
