Organic Whole Rack of Lamb
An impressive cut fit for a feast!
There are a few cuts of meat that deserve centre stage at a celebratory dinner and organic whole rack of lamb is most definitely one of them. Visually stunning, it's also richly flavoured and as tender as can be, with a buttery soft texture. Cut from the 'best end' of the neck, each seven-rib rack is delicately marbled and benefits from a good layer of superficial fat that ensures succulence. To make our organic whole rack of lamb look it's very best, our butchers have French trimmed it, meaning each bone is clean of meat and just inviting you to tuck in with your fingers!

To make the most of our organic West Country pasture, we run a flock of crossbred sheep. Deciding which breeds will bring out the best in each other is the real skill of the shepherd. We're looking for hardy animals with strong, natural immune systems. The ewes must give birth easily and have plenty of milk to nourish their lambs. Having weaned at four months, our lambs grow slowly on a diet of grass, clover and meadow herbs. We believe this natural diet – not supplemented by grain or concentrates – shines through in the distinctive flavour of our lamb.

We deliver all around mainland Britain, excluding the Highlands and Islands. You will be able to choose your preferred delivery slot at checkout.

We will pick, pack and deliver your box the day you have requested.
For every order, we'll send you a text message on the morning it is due to be delivered.
Our courier will leave it in your requested safe place if you would prefer a contactless delivery.

No. You can leave a message with your order telling us where you would like to have your box placed. It would be best placed somewhere cool or at least in the shade – especially during the hotter months of the year. Our products will stay at the same temperature for up to 40 hours, so just make sure that you can pick up your order within that time.
Our couriers will send you a text message or email, whichever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.

We use paper pulp sheets to insulate the box. They are great for craft projects or can also simply be recycled with paper waste.

You can cancel your order within two hours after your online purchase. We can not cancel an order after this period.
We hope that you enjoy our products. But if for any reason you are unhappy, please let us know why within 28 days of delivery, by sending us the batch number and the reason why you are disappointed with the product. Do not throw the product away as we may need to recall it to confirm the problem.
As your product is perishable, you will not be asked to return it for us for re-selling.
When we have looked at the evidence, we will then consider reimbursing you by means of a credit for a future order or resending the product. We will do our very best to respond as quickly as possible and try to resolve it.

Organic whole rack of lamb loves simple cooking – and if you're entertaining a crowd you'll probably love simple, stress-free cooking too. There are a few things worth remembering: make sure you sear the rack in a hot pan – giving the fat plenty of time to render down and start crisping up – before you put it into the oven. If you're planning herb-crusted rack, sear the fat before adding the crust. Also, remember that this is a bone-in cut, so it'll cook more slowly than a rolled loin, for example. While whole rack of lamb is best eaten rare or medium rare, you don't want it undercooked so make sure you test the internal temperature before serving. At 55˚C it'll be medium rare. Finally, let the rack rest before carving – this will ensure meat that's as tender and juicy as can be.
