Organic Sausage Meat

Versatile, moist and good for stuffing, pork sausages, sausage rolls and more.

Essentials 3 for £15

We've taken lovely cuts from the neck and belly, balancing lean muscle with the perfect amount of sweet fat and grinding them finely to make a product that's full of possibility. The fat content means our sausage meat holds together and can be successfully shaped without falling apart when cooked. So whether you're moulding traditional stuffing balls, making your own sausage rolls (try our pork and apple sausage rolls recipe) or adding it as a thickener to a hearty stew that's packed with flavour and offering a really distinctive texture, it's our blend of spices that sets our organic sausage meat apart from plain pork mince, you'll appreciate both taste and texture.

At The Organic Butchery, we believe our animals should grow at the rate nature intended. We do not follow conventional methods; our organic pigs are not given routine antibiotics, enabling them to have effective, natural immune systems – aided by a healthy grass-fed diet.

In industrial systems, pigs are routinely given antibiotics to fend off diseases that are spread due to the high density of the population. This never happens with our organic, outdoor pigs – their lifestyle gives them effective natural immune systems, and their diet of grass, hay and concentrated food helps them grow at the rate nature intended.

Our sausage meat is hand-made using traditional methods in our on-farm butchery. What’s important to us is letting the quality of our slow-grown organic meat shine through. That means only natural ingredients, in their purest forms, and definitely never, ever any nasty fillers, preservatives or additives. We add organic Scottish oats to each recipe to create a texture with hearty bite and substance, and a mix of organic herbs and spices to enhance the flavour of the meat. And because we use organic meat reared in a high-welfare system, we’re confident we’ve got flavour covered.

All of the pork we sell at The Organic Butchery comes from pigs reared in a high-welfare outdoor system. As we follow Soil Association rules, our pigs eat a natural diet that's GM-free. This is supplemented by whatever they can forage out in the fields. As well as grass and herbs, they're especially partial to the worms and insects they can rootle up out of the earth with their inquisitive snouts. A life spent out in the open air also means our pigs are less vulnerable to the common infections that spread amongst intensively reared pigs. So they're never routinely dosed with antibiotics and the meat they produce is accordingly as pure and healthy as you can eat.
