Big-up a little-known cut that deserves way more attention
Organic pork cheeks are a pretty well forgotten cut that you're unlikely to see on the butcher's counter, let alone in the supermarket. For once, the name of this cut is broadly accurate: pork cheeks are the pads of meat from each side of the pig's jaw. They're delicately delicious and, when cooked slowly, meltingly tender and succulent. If you're feeling squeamish about the idea of eating cheeks, please don't. This is a really under-appreciated cut that deserves a try. Our butchers meticulously trim out the meat from the cheek, so there's no prep for you to worry about.

It's amazing how many cuts of meat have become obscure in recent decades. In pre-industrialised Britain, we were a nation of smallholders and pigs would commonly have been fattened up through the summer then slaughtered and preserved for use through the winter. Every bit of the carcass had value and pieces that we don't consider prime these days – like pork cheeks – would have been prized. But because supermarkets aren't butchers, over the years they've found it easier to sell just joints of meat and mince up the fiddly bits. As butchers, at The Organic Butchery we champion the obscure bits and encourage you to seek them out. They really are worth rediscovering.

For every order, we'll send you a text message on the morning it is due to be delivered.

No. You can leave a message with your order telling us where you would like to have your box placed. It would be best placed somewhere cool or at least in the shade – especially during the hotter months of the year. Our products will stay at the same temperature for up to 40 hours, so just make sure that you can pick up your order within that time.
Our couriers will send you a text message or email, whichever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.

You can cancel your order within two hours after your online purchase. We can not cancel an order after this period.
We hope that you enjoy our products. But if for any reason you are unhappy, please let us know why within 28 days of delivery, by sending us the batch number and the reason why you are disappointed with the product. Do not throw the product away as we may need to recall it to confirm the problem.
As your product is perishable, you will not be asked to return it for us for re-selling.
When we have looked at the evidence, we will then consider reimbursing you by means of a credit for a future order or resending the product. We will do our very best to respond as quickly as possible and try to resolve it.

Can't Find the Answer?
If you cannot find the answer to your question and would like to speak to someone contact us and we will be happy to help.
For ultimately tender organic pork cheeks they're best slowly braised. Start by dusting two or three cheeks per person with flour and browning them in a hot pan with a splash of oil. Once browned, remove the cheeks and add chopped onions and leeks to the pan with a knob of butter. Fry gently until softened, then add a good splosh of honey, a handful of woody herbs and equal parts white wine and chicken or pork stock. Return the meat to the pan, put it into a low oven and cook for at least two hours. Once cooked, remove the meat, bring the sauce to a boil on the hob until reduced and thickening. Add a generous glug of cream before serving with the cheeks alongside vibrant greens and parmesan mash.
