Organic Duck Giblets, Previously Frozen
Unrivalled for flavour and frugality - part of our offal range
We're so spoiled by the availability of meat these days that it's easy to overlook the giblets, or consider them as offcuts. At The Organic Butchery, we couldn't disagree more. Duck giblets – the organ meats from the duck carcass – might be unfamiliar, but when you get to know them you'll discover they're bursting with rich flavour and loads of potential.
All of our Perkin ducks are locally reared in Devon’s Blackdown Hills, by working with a poultry specialist who has 40 years of experience running a Soil Association-certified farm, we know that our duck has been reared in a natural, high-welfare system. A natural diet, lots of exercise and the ability to swim, dabble and preen means our ducks are fit and healthy, with strong immune systems. We believe in using the most sustainable methods possible whilst organically rearing our birds; we aim to use as much of the carcass as possible, to reduce wastage.
Fans of offal might also like our organic chicken liver and pork kidney.

Sustainability is a crucial tenet of the The Organic Butchery philosophy so making good use of every bit of every carcass is vital. Our expert butchers cut each joint to maximise yield and we make use of everything from the organs to the bones. Having grown in an organic system means the giblets of our ducks are clean and untainted by chemicals or pharmaceuticals. Like all organs, duck giblets make an excellent addition to a balanced diet.

Organic duck giblets are the perfect ingredient for making all sorts of stocks, soups, broths and gravies. You'll get a ton more flavour than you would from a stock cube. For the simplest stock, add some roughly chopped onion, carrot and celery along with some woody herbs to a hot pan with a splash of oil. Fry briefly, then add the giblets, letting them brown on all sides. Top up the pan and turn the heat down to the lowest simmer, letting it bubble gently for a good couple of hours. Once it's done, discard the meat and veg, leaving a clear, flavoursome stock.
