Organic Fresh Duck
Rich and moreish, organic duck really is an indulgent treat - 2-Star winner at the Great Taste Awards 2021
With its unique flavour and hearty texture, duck makes an indulgently rich change if you're cooking something special. The tender, dark meat feels luxurious and is robust enough to work well with warm spices and complex sauces. Then there are the added bonuses of super-crispy skin and plenty of flavour-packed fat.
All of our ducks are reared in an organic system and this low-stress lifestyle certainly influences the quality of their meat. A natural diet, lots of exercise and the ability to swim, dabble and preen means they’re fit and healthy. This results in meat that’s tender and tasty to eat.
Includes giblets in a separate package which contributes to the total weight.
Minimum Shelf Life: 3 Days

Poultry birds reared for the table live relatively short lives. We believe the quality of that life is directly reflected in the meat the birds produce. All of our ducks are reared in an organic, high-welfare system and this low-stress lifestyle certainly influences the quality of their meat. A natural diet, lots of exercise and the ability to swim, dabble and preen means our ducks are fit and healthy. This results in meat that's tender, tasty and wholesome to eat.

Freezing is the most natural way of preserving food. And as here at The Organic Butchery we believe in slow-grown, healthy food, a form of preservation that doesn’t need artificial additives gets a big tick from us.
It also guarantees it will arrive with you in tiptop condition - confidently delivering fresh meat would be much more challenging.
-
At The Organic Butchery, we source our chicks from an organic breeding flock in the South West, this means they are certified organic from birth. We never use antibiotics on our chickens because our organic farming system provides a natural environment for our birds to thrive without the need for preventative medication: room to roam, a naturally foraged balanced diet, clean water and high hygiene standards.

- First, preheat the oven to 220C/200C fan/gas 7. Place the duck in a large roasting tin and pat the skin dry using kitchen roll
- Cut the orange and red onion into wedges and the garlic bulb in half horizontally. Stuff the cavity of the duck with the orange, red onion and garlic before generously sprinkling the skin with salt and pepper
- Place the duck in the oven for 30 minutes until the skin starts to crisp before turning down the heat to 170C/150C fan/gas 3 and cooking for a further 90 minutes
- Remove the duck from the oven and allow to rest for at least 10 minutes. Remove and discard the orange, onion and garlic from the cavity then transfer onto a board to carve
- Serve alongside seasonal vegetables freshly cut orange wedges
