Organic Ox Tongue, Previously Frozen
The ideal cut for real nose-to-tail eaters
If you've only ever seen tongue in its sliced form on the cold meat counter, a whole one might be a little bit intimidating. But persevere: you'll definitely be very pleasantly surprised. Ox tongue is a frugal cut, but that's not its only merit – it's also divinely tender with a yielding, open texture and delicate flavour. Perfect for cold cuts (of which you'll get a lot from one tongue) it's a favourite ingredient in many Asian cuisines.
At The Organic Butchery, we rear our animals to the highest welfare standards, reflected in the quality of our meat; our cattle are able to roam in large fields, grazing on fresh grass for as long as the weather annually permits - slowly maturing, as nature intended.
Minimum Shelf Life: 3 Days (including day of delivery)
This product has been previously frozen and therefore may defrost partially or fully on its way to you. Due to this it is not suitable for re-freezing.

As with most offal, tongue is a cut about which people can be squeamish and we understand why. At the same time, we're firm advocates of the philosophy of eating everything we can from a carcass, not just the prime cuts and bits that look neat. At The Organic Butchery, the highest level of animal welfare is critical to our organic livestock system so every piece of meat they produce is the very best quality, including the inexpensive cuts.
Please note, as this is a whole natural product the exact weight may vary depending on the size of the animal.

- Refrigerating and Freezing: Will arrive to you on the defrost, having been previously frozen. Defrost thoroughly before cooking and enjoying.

We deliver all around mainland Britain, excluding the Highlands and Islands. You will be able to choose your preferred delivery slot at checkout.

We will pick, pack and deliver your box the day you have requested.
For every order, we'll send you a text message on the morning it is due to be delivered.
Our courier will leave it in your requested safe place if you would prefer a contactless delivery.

No. You can leave a message with your order telling us where you would like to have your box placed. It would be best placed somewhere cool or at least in the shade – especially during the hotter months of the year. Our previously frozen products will defrost on their way to you, ensuring freshness upon arrival. Remember to thoroughly defrost before cooking and indulge in the best quality within 24 hours. Please note that this product cannot be refrozen.
Our couriers will send you a text message or email, whichever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.

Our products will stay cold and fresh at the same temperature for up to 40 hours, however previously frozen products will defrost ont the way to you, ensureing optimum freshness when they arrive.

Your delivery box is made of 100% recycled paper and is 100% recyclable.Delivered Fresh
To keep your order cool and fresh we use gel ice packs which will retain a low temperature for a long period of time. Reuse them for a picnic or return them to us through our free packaging returns sevice.Sustainably Insulated
We use paper pulp sheets to insulate the box. They are great for craft projects or can also simply be recycled with paper waste.

You can cancel your order within two hours after your online purchase. We can not cancel an order after this period.
We hope that you enjoy our products. But if for any reason you are unhappy, please let us know why within 28 days of delivery, by sending us the batch number and the reason why you are disappointed with the product. Do not throw the product away as we may need to recall it to confirm the problem.
As your product is perishable, you will not be asked to return it for us for re-selling.
When we have looked at the evidence, we will then consider reimbursing you by means of a credit for a future order or resending the product. We will do our very best to respond as quickly as possible and try to resolve it.

By having certain lines arrive previosuly frozen we can extend the availability of seasonal produce, allowing you to enjoy it throughout the year as sustainably as possible. All previously frozen produce will be listed as such on our website and labelled on the product packaging.

Can't Find the Answer?
If you cannot find the answer to your question and would like to speak to someone contact us and we will be happy to help.
To cook your organic ox tongue as a joint, place it in a large casserole with enough beef stock to cover it. Add carrots, shallots, celery, garlic and herbs with a pinch of seasoning. Cook in a low oven for three to four hours. When the tongue is tender, remove from the stock and leave to cool briefly before peeling off the outer layer of tough skin. Slice thickly and serve with a rich gravy made from the stock. If you want to use your ox tongue as cold meat it can be gently brined before poaching to give it a longer shelf life.
