How To Cook An Organic Whole Turkey

Leftover Turkey? Try our Risotto Recipe

Please Note: If you plan to purchase a turkey before December 18th, please remember to store it in the freezer until you’re ready to cook it. Properly freezing your turkey will ensure it stays fresh and flavourful for your Festive celebrations.

Remove the Whole Turkey from its wrapping, making sure you keep hold of the exact weight of the bird (you’ll find this on the card label, please remove the giblets bag before cooking). Place the Turkey onto a wire rack and sit the rack on a plate.

Pop the plate into the bottom of the fridge, making sure you have allowed space around the bird for the air to circulate. It is really important to make sure your bird stays cold and dry and must be kept refrigerated below 3°C.

Thawing:
If your roast is frozen, planning for proper thawing is important to ensure even cooking and food safety. For best results, allow 24 hours of thawing time in the refrigerator for every 2.5 kg of meat. For this means you should allow approximately 2 to 3 days for the roast to thaw in the fridge fully.

Here are a few additional tips to ensure your roast thaws properly:

  • Keep it in the original packaging while thawing to prevent any potential contamination or mess from leaking juices.
  • Place the roast on a tray or in a shallow dish to catch any liquid that might escape as it defrosts.
  • Ensure your refrigerator stays at or below 4°C

Avoid thawing the roast on the countertop at room temperature, as this can lead to uneven thawing.

We agree that it's important to know where your turkey has come from and how it's been reared. Our organic turkey’s come from Walter’s Turkey’s in Berkshire. This Soil Association certified organic farm produce the finest quality Christmas turkeys by carefully selecting slow growing breeds that reach full maturity naturally. All turkeys have plenty of space to run about in and enjoy natural daylight.
From late summer the turkey’s live in large airy barns that open on to green downland fields.  Every day they explore their natural surroundings pecking at the grass and bales in the fresh air.  At night they are in large, straw bedded barns with plenty of room. They are fed on high quality organic feed (a mix of wheat, barley and oats). They are one of the few organic turkey producers in the country that hang and dry pluck their turkeys in the traditional way.

We only rear Bronze turkeys, an old-fashioned breed that provides a carcass with fantastic flavour and even coverage of meat. The natural flavour of the bird is made even better by slow growth to natural maturity. This takes 24 weeks and results in meat that's reliably juicy and tasty, with a tender texture and just the right amount of fat.

Once slaughtered, all of our turkeys are hung for at least 7 days. This process allows some moisture to evaporate (so you'll see no shrinkage in the oven) and the muscles to relax (so the meat is soft and flavoursome). Hanging, as well as the slow growth of the birds, means cooking times will be a bit shorter than you might expect for intensively reared birds. At 180˚C, plan for 20 to 30 minutes cooking per kilo.

    Can't Find the Answer?

If you cannot find the answer to your question and would like to speak to someone contact us and we will be happy to help.

Because our birds are slow grown and the carcasses have been hung, they'll take less time to cook than an intensively reared bird. And you'll see no shrinkage in the oven as they're not full of excess moisture.

  • Remove your bird from the fridge at least an hour before cooking, to let it come to room temperature. This cuts down cooking time and allows everything to roast evenly.
  • Don't stuff the cavity. This creates a huge, dense joint that'll take ages to cook. If you leave it unstuffed it allows the legs and breast to cook evenly, meaning everything's juicy. Cooking the stuffing in a separate dish also makes carving and serving easier.
  • remember that resting is just as important as cooking. It lets the meat relax and the juices to distribute evenly. The residual heat in the bird means it'll continue cooking while it rests, so be brave and remove it from the oven when it's a bit under the ideal 74˚C. Wrap it in foil and tea towels and the temperature will continue to rise while you get on with the veg. Don't worry about it getting cold; if it's well wrapped it can happily rest in its own heat for an hour or more.
  • to test when your turkey is done, pierce the thickest part of the thigh, and check that the juices run clear. Or twist the knee joint; if it gives easily, the bird is ready.
