At The Organic Butchery, we think the good old-fashioned goose is a much under-appreciated bird. Once upon a time, every smallholding would have kept a goose to do duty both as a guard bird (they can be quite mean and very noisy) and to serve as their Michaelmas or Christmas dinner. Because of the richness of their meat and the amount of fat they carry, geese never made it as commercial poultry. So these days, cooking a goose is really something very special indeed. With tender, dark meat and delicious crispy skin, a goose on your table really is a taste of tradition.

Our geese are reared with dedication to organic principles by our farmers in the Blackdown Hills, fed on a diet of organic and wild-foraged foods. While they are raised with these principles in mind, please note that they are not certified organic.

Please Note: If you plan to purchase a Duck before December 18th, please remember to store it in the freezer until you’re ready to cook it. Properly freezing your Duck will ensure it stays fresh and flavourful for your Festive celebrations.

Remove the Whole Duck from its wrapping, making sure you keep hold of the exact weight of the bird (you’ll find this on the card label, please remove the giblets bag before cooking). Place the Whole Duck onto a wire rack and sit the rack on a plate. 

Pop the plate into the bottom of the fridge, making sure you have allowed space around the bird for the air to circulate. It is really important to make sure your bird stays cold and dry and must be kept refrigerated below 3°C. 

Thawing:
If your roast is frozen, planning for proper thawing is important to ensure even cooking and food safety. For best results, allow 24 hours of thawing time in the refrigerator for every 2.5 kg of meat. For this means you should allow approximately 2 to 3 days for the roast to thaw in the fridge fully.

Here are a few additional tips to ensure your roast thaws properly:

  • Keep it in the original packaging while thawing to prevent any potential contamination or mess from leaking juices.
  • Place the roast on a tray or in a shallow dish to catch any liquid that might escape as it defrosts.
  • Ensure your refrigerator stays at or below 4°C

Avoid thawing the roast on the countertop at room temperature, as this can lead to uneven thawing.

  • We deliver all around mainland Britain, excluding the Highlands and Islands. You will be able to choose your preferred delivery slot at checkout.

  • We can deliver to you Tuesday to Saturday.

    We will pick, pack and deliver your box the day you have requested.

    For every order, we'll send you a text message on the morning it is due to be delivered.

    Our courier will leave it in your requested safe place if you would prefer a contactless delivery.

  • We have a minimum order of £50. 

  • Our Standard Delivery Charge is £4.95 (Tuesday to Friday). There is Free Delivery on Orders Over £120, Receive your order Before 12 pm for £6.95. Saturday Delivery is £6.95

  • No. You can leave a message with your order telling us where you would like to have your box placed. It would be best placed somewhere cool or at least in the shade – especially during the hotter months of the year. Our products will stay at the same temperature for up to 40 hours, so just make sure that you can pick up your order within that time.

    Our couriers will send you a text message or email, whichever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.

  • Our products will stay cold and fresh at the same temperature for up to 40 hours. When you receive your box, simply refridgerate and cook before the use by date provided or freeze to enjoy at a later date.

    To keep your order cool and fresh we use gel ice packs which will retain a low temperature for a long period of time. Reuse them for a picnic or return them to us through our free packaging returns sevice.

    We use paper pulp sheets to insulate the box. They are great for craft projects or can also simply be recycled with paper waste.

     

  • You can cancel your order within two hours after your online purchase. We can not cancel an order after this period.

    We hope that you enjoy our products. But if for any reason you are unhappy, please let us know why within 28 days of delivery, by sending us the batch number and the reason why you are disappointed with the product. Do not throw the product away as we may need to recall it to confirm the problem.

    As your product is perishable, you will not be asked to return it for us for re-selling.

    When we have looked at the evidence, we will then consider reimbursing you by means of a credit for a future order or resending the product. We will do our very best to respond as quickly as possible and try to resolve it.

  • Freezing is the most natural way of preserving food. And as here at The Organic Butchery we believe in slow-grown, healthy food, a form of preservation that doesn’t need artificial additives gets a big tick from us.

    It also guarantees it will arrive with you in tiptop condition - confidently delivering fresh meat would be much more challenging.

  • At The Organic Butchery, we source our chicks from an organic breeding flock in the South West, this means they are certified organic from birth. We never use antibiotics on our chickens because our organic farming system provides a natural environment for our birds to thrive without the need for preventative medication: room to roam, a naturally foraged balanced diet, clean water and high hygiene standards.

Cooking Instructions: Preheat your oven to 180°C. Remove any giblets from your goose and pat the bird dry with paper towels. Rub the bird with a tablespoon of olive oil, season with salt and pepper, and place a halved onion, garlic and herbs in the cavity and cover with foil. Roast for approximately 30 minutes per 500g (for example: A 4kg goose will require about 2 hours and 40 minutes) on a rack in a roasting tin, basting occasionally with the meat juice. Remove the foil for the final 30 minutes of cooking to crisp up the skin. The goose is ready when the internal temperature of the meat reaches 75°C at the thickest part of the thigh. Let the goose rest, covered loosely with foil, for about 20-30 minutes before carving.
