Our Organic Pies

 

Nobody loves a pie as much as the British but there’s more than meets the eye when it comes to this perfectly packaged dinnertime staple. Whilst it was the Egyptians who began creating dishes that closely resembled a pie, it was the Romans who first tried adding filling to a pastry enclosure - the first recipe published was goat’s cheese and honey in a rye dough. Delicious!

Our love for pies has only grown and it is now the ultimate comfort food, best served with creamy mash and a generous amount of gravy. Here at The Organic Butchery, we love working with suppliers to offer you traceable, sustainable and high welfare produce and our pies are no different. Using our own organic meat, we’ve been working closely with a local manufacturer to offer you three tasty pies (steak and ale, chicken and mushroom and lamb and mint) which are packed full of flavour.

Organic Steak & Ale Pie

Our beef is slow grown to natural maturity, along with a natural grass diet, this is what makes our beef hearty, with well-rounded flavour, bags of character and substantial texture. Our organic stewing steak and lashings of ale are slow-cooked until the meat is fall-apart tender and infused with the flavour of the ale. Combined with crumbly buttery shortcrust pastry the result is the perfect marriage of flavours and textures!

Organic Lamb & Mint Pie

Thriving on a diet of grass as well as clover and herbs, our lambs are able to make the most of our West Country pasture. Allowing them to grow slowly means they have well-developed muscle with a natural, palatable covering of sweet fat. For this pie, diced lamb is combined with shredded mint. Add to that some beef stock, a sprinkling of flour to thicken the gravy and a smidge of seasoning and herbs. The result is big, satisfying flavour and tender meat combined with crumbly pastry hits just the right contrast in texture. 

Organic Chicken & Mushroom Pie

We work with a specialist poultry farm based in Pembrokeshire, they rear all our poultry in a free-range, organic environment and to the highest welfare standards. The birds can roam and forage, making the most of their natural instincts - this healthy lifestyle results in richly flavoured meat with a well-defined texture. Our delicious organic chicken, mushroom & tarragon pie is packed with flavoursome chicken and lashings of mushrooms in natural home-made creamy gravy, with a hint of tarragon and wrapped in our thin buttery shortcrust pastry.
